Ingredients:
- 2 cans (15 oz each) chickpeas, rinsed and drained
- 1 English cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves, chopped
- Juice of 1 lemon
- 1/4 cup extra virgin olive oil
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
Instructions:
- Prepare the Salad:
- In a large salad bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, thinly sliced red onion, sliced Kalamata olives, crumbled feta cheese, chopped parsley, and chopped mint leaves.
- Make the Dressing:
- In a small bowl, whisk together the lemon juice, extra virgin olive oil, dried oregano, salt, and black pepper until well combined.
- Combine and Toss:
- Pour the dressing over the chickpea salad ingredients in the bowl.
- Gently toss the salad until everything is evenly coated with the dressing.
- Chill and Serve:
- Cover the salad bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
