Chicken Souvlaki​

Ingredients:

For the Chicken Marinade:

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste

For Serving:

  • Pita bread
  • Tzatziki sauce (recipe follows)
  • Sliced tomatoes
  • Sliced red onions
  • Chopped fresh parsley or mint for garnish

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, paprika, ground cumin, salt, and black pepper.
    • Add the chicken pieces to the marinade and toss until well coated. Cover the bowl and refrigerate for at least 1 hour, or ideally overnight, to allow the flavors to meld.
  2. Prepare the Tzatziki Sauce:
    • While the chicken is marinating, prepare the tzatziki sauce using the recipe provided in the Lamb Kofta recipe above. (See previous response for Tzatziki Sauce ingredients and instructions.)
  3. Skewer and Grill the Chicken:
    • Preheat your grill or grill pan over medium-high heat.
    • Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.
    • Grill the chicken skewers for about 5-6 minutes per side, or until the chicken is fully cooked through and has nice grill marks. The internal temperature should reach 165°F (74°C).
  4. Serve:
    • Serve the grilled chicken souvlaki skewers immediately with warm pita bread, tzatziki sauce, sliced tomatoes, sliced red onions, and a sprinkle of fresh chopped parsley or mint.
    • Alternatively, you can wrap the chicken souvlaki in pita bread with tzatziki sauce and vegetables for a delicious sandwich.
