Ingredients:
For the Chicken Marinade:
- 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- Salt and freshly ground black pepper to taste
For Serving:
- Pita bread
- Tzatziki sauce (recipe follows)
- Sliced tomatoes
- Sliced red onions
- Chopped fresh parsley or mint for garnish
Instructions:
- Marinate the Chicken:
- In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, paprika, ground cumin, salt, and black pepper.
- Add the chicken pieces to the marinade and toss until well coated. Cover the bowl and refrigerate for at least 1 hour, or ideally overnight, to allow the flavors to meld.
- Prepare the Tzatziki Sauce:
- While the chicken is marinating, prepare the tzatziki sauce using the recipe provided in the Lamb Kofta recipe above. (See previous response for Tzatziki Sauce ingredients and instructions.)
- Skewer and Grill the Chicken:
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.
- Grill the chicken skewers for about 5-6 minutes per side, or until the chicken is fully cooked through and has nice grill marks. The internal temperature should reach 165°F (74°C).
- Serve:
- Serve the grilled chicken souvlaki skewers immediately with warm pita bread, tzatziki sauce, sliced tomatoes, sliced red onions, and a sprinkle of fresh chopped parsley or mint.
- Alternatively, you can wrap the chicken souvlaki in pita bread with tzatziki sauce and vegetables for a delicious sandwich.
