Lamb Kofta​

Ingredients:

For the Lamb Kofta:

  • 1 pound ground lamb
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and freshly ground black pepper to taste
  • Olive oil, for brushing

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess moisture
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • Juice of 1/2 lemon
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Prepare the Lamb Kofta:
    • In a large bowl, combine the ground lamb, finely grated onion, minced garlic, chopped parsley, chopped mint, ground cumin, ground coriander, ground cinnamon, paprika, cayenne pepper (if using), salt, and black pepper.
    • Mix well until all the ingredients are evenly incorporated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  2. Shape and Grill the Kofta:
    • Preheat your grill or grill pan over medium-high heat.
    • Take a handful of the lamb mixture and shape it into long, sausage-like cylinders around metal skewers or wooden skewers that have been soaked in water.
    • Brush the kofta skewers lightly with olive oil.
    • Grill the kofta skewers for about 3-4 minutes per side, or until they are cooked through and have nice grill marks. Rotate the skewers as needed for even cooking.
  3. Make the Tzatziki Sauce:
    • In a small bowl, combine the Greek yogurt, grated cucumber (squeeze out excess moisture using a clean kitchen towel or paper towel), minced garlic, chopped dill, chopped mint, lemon juice, salt, and black pepper.
    • Mix well until smooth and creamy. Adjust seasoning to taste.
  4. Serve:
    • Serve the grilled lamb kofta skewers hot off the grill, accompanied by the tzatziki sauce for dipping or drizzling.
    • Garnish with additional chopped herbs if desired.
