Mediterranean Chickpea Salad​

Ingredients:

  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Prepare the Salad:
    • In a large salad bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, thinly sliced red onion, sliced Kalamata olives, crumbled feta cheese, chopped parsley, and chopped mint leaves.
  2. Make the Dressing:
    • In a small bowl, whisk together the lemon juice, extra virgin olive oil, dried oregano, salt, and black pepper until well combined.
  3. Combine and Toss:
    • Pour the dressing over the chickpea salad ingredients in the bowl.
    • Gently toss the salad until everything is evenly coated with the dressing.
  4. Chill and Serve:
    • Cover the salad bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
