Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1/2 cup white wine (optional)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and freshly ground black pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley or oregano for garnish
Instructions:
- Prepare the Shrimp:
- In a large skillet or frying pan, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another 1-2 minutes until fragrant.
- Cook the Shrimp:
- Increase the heat to medium-high and add the peeled and deveined shrimp to the skillet.
- Cook the shrimp for about 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- Make the Tomato Sauce:
- In the same skillet, add the crushed tomatoes and white wine (if using), stirring to combine.
- Season the sauce with dried oregano, dried basil, salt, and black pepper. Allow the sauce to simmer for 5-7 minutes, stirring occasionally, until it thickens slightly.
- Combine and Simmer:
- Return the cooked shrimp to the skillet, stirring gently to coat them with the tomato sauce.
- Sprinkle the crumbled feta cheese evenly over the top of the shrimp and sauce.
- Finish and Serve:
- Cover the skillet and let the shrimp saganaki simmer for an additional 2-3 minutes, or until the cheese is melted and bubbly.
- Remove from heat and garnish with fresh parsley or oregano.
