Shrimp Saganki​

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup white wine (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and freshly ground black pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh parsley or oregano for garnish

Instructions:

  1. Prepare the Shrimp:
    • In a large skillet or frying pan, heat the olive oil over medium heat.
    • Add the chopped onion and sauté until translucent, about 3-4 minutes.
    • Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  2. Cook the Shrimp:
    • Increase the heat to medium-high and add the peeled and deveined shrimp to the skillet.
    • Cook the shrimp for about 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Tomato Sauce:
    • In the same skillet, add the crushed tomatoes and white wine (if using), stirring to combine.
    • Season the sauce with dried oregano, dried basil, salt, and black pepper. Allow the sauce to simmer for 5-7 minutes, stirring occasionally, until it thickens slightly.
  4. Combine and Simmer:
    • Return the cooked shrimp to the skillet, stirring gently to coat them with the tomato sauce.
    • Sprinkle the crumbled feta cheese evenly over the top of the shrimp and sauce.
  5. Finish and Serve:
    • Cover the skillet and let the shrimp saganaki simmer for an additional 2-3 minutes, or until the cheese is melted and bubbly.
    • Remove from heat and garnish with fresh parsley or oregano.
