Ingredients:

- 1/2 cup fresh mint leaves, finely chopped
- 1 cup cherry tomatoes, diced
- 1 cucumber, diced
- 3 green onions, thinly sliced
- Salt and freshly ground black pepper to taste
Instructions:
- Prepare the Bulgur Wheat:
- Place the bulgur wheat in a heatproof bowl. Pour the boiling water over the bulgur and cover with a lid or plastic wrap. Let it sit for about 20 minutes, or until the bulgur is tender and has absorbed all the water. Fluff with a fork and let it cool to room temperature.
- Make the Dressing:
- In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, salt, and black pepper until well combined.
- Combine Ingredients:
- In a large salad bowl, combine the cooled bulgur wheat, chopped parsley, chopped mint, diced cherry tomatoes, diced cucumber, and thinly sliced green onions.
