Tabbouleh​

Ingredients:

  • 1 cup bulgur wheat
  • 1 1/2 cups boiling water
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 cups fresh parsley, finely chopped
  • 1/2 cup fresh mint leaves, finely chopped
  • 1 cup cherry tomatoes, diced
  • 1 cucumber, diced
  • 3 green onions, thinly sliced
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Prepare the Bulgur Wheat:
    • Place the bulgur wheat in a heatproof bowl. Pour the boiling water over the bulgur and cover with a lid or plastic wrap. Let it sit for about 20 minutes, or until the bulgur is tender and has absorbed all the water. Fluff with a fork and let it cool to room temperature.
  2. Make the Dressing:
    • In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, salt, and black pepper until well combined.
  3. Combine Ingredients:
    • In a large salad bowl, combine the cooled bulgur wheat, chopped parsley, chopped mint, diced cherry tomatoes, diced cucumber, and thinly sliced green onions.
  4. Add the Dressing:
    • Pour the dressing over the salad ingredients in the bowl.
  5. Toss and Chill:
    • Gently toss the tabbouleh salad until everything is evenly coated with the dressing.
    • Cover the salad bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  6. Serve:
    • Serve tabbouleh salad chilled, garnished with additional fresh parsley or mint leaves if desired.
