Ingredients:

  • 1 cup strong brewed coffee or espresso, cooled to room temperature
  • 2 tablespoons coffee liqueur (such as Kahlua), optional
  • 3 large eggs, separated
  • 1/2 cup granulated sugar, divided
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 24-30 ladyfinger cookies (savoiardi)
  • Unsweetened cocoa powder, for dusting

Instructions:

  1. Prepare the Coffee Mixture:
    • In a shallow dish, combine the cooled brewed coffee or espresso with the coffee liqueur, if using. Set aside.
  2. Make the Mascarpone Filling:
    • In a large mixing bowl, beat the egg yolks with 1/4 cup of granulated sugar until pale and creamy.
    • Add the softened mascarpone cheese and vanilla extract to the egg yolk mixture. Beat until smooth and well combined.
  3. Whip the Egg Whites:
    • In a separate clean bowl, beat the egg whites until foamy.
    • Gradually add the remaining 1/4 cup of granulated sugar, continuing to beat until stiff peaks form.
  4. Combine and Layer:
    • Gently fold the whipped egg whites into the mascarpone mixture until smooth and airy.
  5. Assemble the Tiramisu:
    • Quickly dip each ladyfinger cookie into the coffee mixture, ensuring they are soaked but not overly saturated.
    • Arrange a layer of soaked ladyfingers in the bottom of a 9×9-inch square dish or a similar-sized serving dish.
    • Spread half of the mascarpone mixture evenly over the layer of ladyfingers.
    • Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  6. Chill and Serve:
    • Cover the Tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
  7. Dust with Cocoa Powder:
    • Before serving, dust the top of the Tiramisu with unsweetened cocoa powder using a fine mesh sieve.
