Ingredients:
- 1 cup strong brewed coffee or espresso, cooled to room temperature
- 2 tablespoons coffee liqueur (such as Kahlua), optional
- 3 large eggs, separated
- 1/2 cup granulated sugar, divided
- 8 ounces mascarpone cheese, softened
- 1 teaspoon vanilla extract
- 24-30 ladyfinger cookies (savoiardi)
- Unsweetened cocoa powder, for dusting
Instructions:
- Prepare the Coffee Mixture:
- In a shallow dish, combine the cooled brewed coffee or espresso with the coffee liqueur, if using. Set aside.
- Make the Mascarpone Filling:
- In a large mixing bowl, beat the egg yolks with 1/4 cup of granulated sugar until pale and creamy.
- Add the softened mascarpone cheese and vanilla extract to the egg yolk mixture. Beat until smooth and well combined.
- Whip the Egg Whites:
- In a separate clean bowl, beat the egg whites until foamy.
- Gradually add the remaining 1/4 cup of granulated sugar, continuing to beat until stiff peaks form.
- Combine and Layer:
- Gently fold the whipped egg whites into the mascarpone mixture until smooth and airy.
- Assemble the Tiramisu:
- Quickly dip each ladyfinger cookie into the coffee mixture, ensuring they are soaked but not overly saturated.
- Arrange a layer of soaked ladyfingers in the bottom of a 9×9-inch square dish or a similar-sized serving dish.
- Spread half of the mascarpone mixture evenly over the layer of ladyfingers.
- Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
- Chill and Serve:
- Cover the Tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
